Coriander chutney

Make spicy coriander chutney by grinding 1 cup chopped coriander leaves, 4 cloves garlic, 3-4 green chilies, 1 tsp lemon zest, 2 tbsp water, and some salt. Blend these ingredients until you get the consistency that you want. Keep in a sealed container and keep refrigerated.
Coconut chutney
1 cup grated coconut, 2 tablespoons roasted chana daal, salt, 1/2-inch ginger, and 2 tbsp water. Place 1/2 cup of freshly grated coconut, or 1/2 cup desiccated Coconut in a grinder. Grind until you get a smooth consistency. Heat some oil in a saucepan. Add 1/2 tsp mustard seeds and 1/2 tsp of urad dal. Season with a pinch of asafoetida. Stir in 2 dried red chilies. Add to the prepared chutney and saute on high heat. Serve.
Tomato chutney
Blend 2 cups of tomatoes, 1 cup peanuts, 2 dry chilies, 2 cloves garlic, 1/2 tsp oil, and some salt. To temper the mixture, heat 1 tablespoon oil in a saucepan and add 2 teaspoons of mustard seeds, 1 tbsp turmeric, and 4-5 curry leaves. When the oil starts to smoke, add it to the chutney.
