Quick to make, good to Eat
Pancakes
Ingredients: Oats/ragi/wheat/rice flour – 2 tbsp
Eggs – 2 whites (use 2 tbsp curd if you don’t eat eggs)
Milk – 200 ml (use only in case of using eggs)
Banana – 1 fully ripe Unsweetened cocoa – 1 tbsp (only for chocolate lovers like me, optional)
For fragrance (use any one or a mixture of given ingredients) Vanilla essence – 2-3 drops Cardamom – 2,
finely crushed Cinnamon powder – half a teaspoon
Method: In a bowl, mash 1 fully ripe banana Add the flour, unsweetened cocoa, and the fragrant component, curd or eggs and milk (whatever you choose, add slowly and keep mixing simultaneously to avoid any lumps). On a pan, drizzle a drop of oil and pour half of the mixture in the center of the pan. Cover the pan and let the pancake cook on a low flame. Turn the pancake when it starts to leave the pan around its circumference (that’s when it turns golden brown); let the other side also turn slightly golden. Repeat with the rest of the mixture.
Oats pudding
Ingredients: Rolled Oats: 1 handful Milk/ curd/ any plant-based milk or yoghurt – 1 glass or around 200 ml
Fruit: around 200 gm Apple/ strawberry / mango / banana/ pomegranate (with milk) Pineapple/ strawberry / grapes/ kiwi (with curd)
Nuts – 8-10 pieces (Almonds/ cashews / walnuts) Or seeds 1 tbsp (flaxseeds/ pumpkin seeds/ chia seeds/ sesame seeds)
Method: Mix everything together in a bowl and refrigerate for 30 minutes before consuming.
